Zucchini “pasta” Alfredo:
Ingredients:
3 tablespoons butter, 3 zucchini spiralized, 1 teaspoon of minced garlic, ½ cup of heavy cream, 1/2 cup of chicken broth, 1/2 teaspoon of thyme, ¼ cup of grated parmesian, 2 tablespoons of chopped fresh parsley, salt and pepper to taste.
To spiralize zucchini you need a little device that you can get online for about $30.
These devices are easy to use and easy to clean. You can buy zucchini in the supermarket that has already been spiralized, but it becomes mushy quickly so you have to use it that day. So it’s easier and cheaper to buy this little device and buy whole zucchini and spiralize them when you need it. It tastes much better because it has a nice texture.
Another tip- cook the zucchini very briefly, only 2 or 3 minutes. This also maintains the texture and makes it pasta-like. If you cook zucchini too long, it gets slimy and yucky.
Directions: In a sauce pan add the garlic, heavy cream, chicken broth, thyme, and cheese. Cook on a low heat for about 10 minutes. Add the parsley in the last minute. In a sauté pan add the butter and heat at medium until the butter is melted. Add the zucchini and only cook for no more than 3 minutes. Combine the sauce into the zucchini. Salt and pepper to taste. Serve immediately with a protein (meat, tofu, fish, or eggs) and a serving of vegetables like green beans, broccoli, or lima beans.
