Grilled Yellow squash/Eggplant Medley with Hamburgers in lettuce leaf: Ingredients:

3 eggplants, 2 yellow squash, large red onion, 2 green and 2 red peppers, Cup of extra virgin olive oil, Cumin, black pepper, garlic and paprika powder/spices, Salt, Boston leaf lettuce, Gouda cheese.


Prep time: 2 hours, including grilling.


Cut the eggplant and yellow squash in slices and boil them for 5 minutes in water in the microwave. Let them cool down and then cut the rinds off and put them in a bowl. Cut up the red onion in half and use half of it for the hamburgers and tomato relish. Use the other half and cut it in large slices and mix it in with the squash and eggplant. Add the cup of extra virgin olive oil and the spices and mix it all together and cover the bowl and have it sit marinating in the refrigerator for at least an hour.


Prepare the hamburgers to the size you want and wash large leaves from the Boston lettuce.


Prepare the grilling basket for the vegetables with some PAM or oil and start the grill up at low. After the veggie medley has marinated for at least an hour put it in the basket and grill it on low for at least half an hour, before you start grilling the hamburgers.

Grill Hamburgers to your preferred rareness, add a slice of Gouda cheese if preferred and serve everything together.












Another tip- Make your own tomato relish by slicing red cherry tomatoes in very small pieces and mix it with some finely sliced red onions(see picture).
