Ingredients:
6 tablespoons butter, ½ cup of extra virgin olive oil, 1 large head of Cauliflower, 1 teaspoon of minced garlic, ½ cup of heavy cream or 3 cups milk,1 large onion, 1 bag of grated Parmesan, 1 bag of grated Mozzarella , 1 bag of grated Provolone or Gruyere, salt and pepper to taste.
Directions: Cut the cauliflower in small pieces, but not too small, coarser like the size of macaroni. Do not use a cuisine art, because it would mince the cauliflower to fine, you can use a blender, and as long as the cauliflower stays coarse (it will otherwise become a very mushy dish). Take a deep pot and start heating up the extra virgin olive oil and cut the onion up in fine pieces and brown it together with the mince garlic. When the onions are glazed looking mix in all the cauliflower and keep the heat high for a few minutes. Then lower the heat on the pot and add the butter, the grated cheeses and the milk/heavy cream to make it a creamy substance. Add salt and pepper to taste and Bon Appétit.
Another tip: Add cooked ham cubes to the dish. For the non pork eating: Add smoked turkey cubes.
